A client of mine connects to the main server (Windows Server 2000) and
accesses their primary op software via remote desktop. While she is
connected, of course, the IP address of the server is displayed on her
desktop at the top of the session window on the tab that hangs down.

Is there a way to either conceal that IP address or rename it?

You can mess with the hosts file at the clients machine located in
C:/Windows/System32/Drivers/ETC/Hosts I don't remember what
extension the hosts file has but you can edit it with notepad. Or if
the clients machine can resolve your computer name then they should use
the computer name and not the IP when connecting to the server.
