I am using Win XP as a client and trying to RDP one of the WIN 2003 server.
How should I unlock my RDPed server screen from my client?

Ctrl-Alt-End is the rdp equivalent of Ctrl-Alt-Del.

That said, depending on you SP level, you might not be able to do it
at all. The following problem is fixed in 2003 SP1:
