I enabled terminal services, for the purpose of remoting into the server for
times when it needs to be rebooted. But when I remote in, I am not seeing the
desktop or session currently running on the server; It creates another
session. How do I enable it so that I can control the servers?

You can control the server (i.e. you can reboot it and perform other
administrative tasks), but you cannot interact with the console
session (= session 0). This feature was introduced in Windows 2003
TS.
